(懶人救星)『咕咕』上菜【四神排骨湯】CUCKOO電子鍋食譜

我非常喜歡喝湯!身為來者不拒的湯控,不管是西方的濃湯還是東方的清湯,都是米飛餐桌上的熟面孔。

出發前往荷蘭前一天,除了拜祖先、我和半獸人先生心心念念的就是一定要去台南中西區百年中藥行【博仁堂】大肆採購配好的各式藥材包,為歐洲冰凍的冬日餐桌做萬全準備。

荷蘭冬天真的好冷,能源危機下我們捨不得開地熱燒錢,至少也要煲一鍋四神排骨湯溫暖自己!

I really love soup! Soup, broth, eastern, western, you may find all kinds of soup on my “soup-maniac” table.

In order to cope with the freezing winter in Europe, aside from paying tributes to our ancestors(which is really common for Taiwanese before leaving homeland), the most important thing on our TO-DO-LIST was to visit the famous Chinese herbal medicine pharmacy(PO-JEN STORE) and shop for assorted herbal packs to make delicious soup!

It is a really freezing winter in The Netherlands, floor heating is out of the picture due to sky-racketing gas price. Let’s make a bowl of sisheng soup and warm up!

四神排骨湯(2~4人份)
【博仁堂】四神藥材 1包
排骨 300g
水 500ml(或至電子鍋標示「煮粥」水位)
米酒 1茶匙
鹽巴 1茶匙
白胡椒粉 依個人口味適量

四神排骨
美味秘訣

1.台南【博仁堂】四神藥材包
2.排骨乾鍋炙燒再入鍋燉
3.白胡椒粉灑好灑滿

四神湯,是進入門檻最低的藥膳湯品。

比起黑壓壓的湯(例如:首烏、四物)或是味道太濃烈(例如:人蔘)的藥膳湯,用排骨引領薏仁、淮山、蓮子、芡實熬煮的四神排骨湯,滋味溫潤又能驅除體內濕氣,是普羅大眾的第一碗「補湯」、也是我最喜歡的食補料理。

I adore Sishen soup very much. It’s the very first Chinese medical soup for most people and is suitable for everyone! You can benefit from Sishen soup as to ventilate dampness from inner body.

四神排骨湯 料理步驟

#1 乾鍋炙燒排骨雙面

加熱平底鍋,放上排骨(300g)將雙面煎至微微焦黃、再用水沖洗排骨表面的肉渣,

Heat up a frying pan and grill both sides of the pork rib(300g) till mild brown, then wash away residues of the pork rib

#2 所有食材加入電子鍋

將雙面炙燒過的排骨(300g)【博仁堂】四神藥材(1包)水(500ml)米酒(1茶匙)放入電子鍋並按「煮粥模式」烹煮,

Throw in grilled pork rib(300g), PO-JEN STORE sishen herbal pack (1 pac), water(500ml) and rice wine(1ts) to CUCKOO cooker then switch to “ porridge mode” and start cooking,

#3 加鹽巴、白胡椒粉

1個小時後煮好,再加入鹽巴(1茶匙)白胡椒粉(依個人喜好)調味,就完成囉!

It will take almost an hour to be ready. After CUCKOO is done, you may open the cooker then add salt(1ts) and white pepper(as much as desired) to your taste!

由於基本款紅蛋『咕咕』電子鍋沒有高壓煲湯功能,所以煲這鍋四神排骨湯大約需要1小時。只要事先備料、設定預煮,時間到了會自動保溫,我個人覺得不太影響我的料理步調(反正歐洲人本來就跟樹懶一樣)。

打開電子鍋瞬間整個廚房煙霧裊裊,鍋內裝滿淡雪色澤的大骨高湯;而排骨與藥膳的氣味交織不斷勾引食慾。

輕輕舀起一勺,我好喜歡吃軟爛的薏仁和蓮子,排骨用嘴巴輕咬就能「骨肉分離」,湯品尾韻還帶一抹白胡椒的辛辣,真的好滿足。

荷蘭的豬肉很好吃又便宜,不管是排骨還是肉片都沒有豬臭味。

無論荷蘭超市(JUMBO、AH)或是亞洲連鎖超市「東方行」都能輕鬆買到煲湯神物——排骨。搭配歐洲廚房救星『咕咕』電子鍋,煮婦懶在被窩裡也能煲一鍋療癒又美味的四神排骨湯。讓我們一起在歐洲溫暖開飯!
